I don't know about you, but I'm actually not a massive snacker...(I know, so surprising eh?). However, sometimes I do just need a little mouthful, or I'm still hungry and Ijust can't stop my stomach rumbling. If, like me, you also workout a lot, or need that punch of fuel before you train, then these little toasts are so perfect. Not only are they super easy and quick to make, but they're high in protein and filled with good ingredients. The creamy hummus (and I do recommend getting a good one!!), with the succulent roasted tomatoes and the salty pastrami is so so so good. I actually quite often have two slices for a lunch, and I never regret this decision!!
If you've never tried vegetarian Pastrami then this is definitely the time!! Made by the company Squeaky Bean, they are completely plant-based, high in protein and low in saturated fat, and they are so versatile to use. They're great in sandwiches, amazing chopped up in pasta bakes and vegetable dishes, but perfect for layering and using in snacks like these toasts. They also add a great new texture too, and have a slightly smoky taste (which in this case works so well with the hummus!) I absolutely LOVE them, and it's also so comforting and reassuring to know that you're helping to save the world's rainforests by choosing this type of vegetarian meals alternative. A cruelty-free, high protein snack in under 20 minutes? Yes please!!
