Veggie Pastrami, Hummus and Roasted Tomatoes on Toast
As a quick snack, these toasts are high in protein and ridiculously tasty: they're creamy, crispy and juicy all in one!

Ingredients
- 6 cherry tomatoes
- 3 slices of (veggie) Squeaky Bean Pastrami
- 2 tbsp hummus (I LOVE Sabra's "Extra Hummus")
- 1 slice wholemeal bread
- Extra-virgin Olive Oil
- Additional: salt, pepper
Instructions
- Preheat your oven to 200°C / Fan 180°C / 375°F / Gas Mark 6.
- In a small oven dish, place the cherry tomatoes and the olive oil inside and give the tomatoes a good mix until coated by the oil. Sprinkle on some salt and pepper and place in the oven to roast for 15 minutes.
- Place your wholemeal bread in the oven or toasted and cook until browned.
- Slather the hummus on top of the toasted bread and place the veggie pastrami over the hummus.
- Gently add the tomatoes on top, and finish with an additional sprinkling of salt and pepper if necessary.
