Veggie Pastrami, Hummus and Roasted Tomatoes on Toast

As a quick snack, these toasts are high in protein and ridiculously tasty: they're creamy, crispy and juicy all in one!

Ingredients

  • 6 cherry tomatoes
  • 3 slices of (veggie) Squeaky Bean Pastrami
  • 2 tbsp hummus (I LOVE Sabra's "Extra Hummus")
  • 1 slice wholemeal bread
  • Extra-virgin Olive Oil
  • Additional: salt, pepper

Instructions

  1. Preheat your oven to 200°C / Fan 180°C / 375°F / Gas Mark 6.
  2. In a small oven dish, place the cherry tomatoes and the olive oil inside and give the tomatoes a good mix until coated by the oil. Sprinkle on some salt and pepper and place in the oven to roast for 15 minutes.
  3. Place your wholemeal bread in the oven or toasted and cook until browned.
  4. Slather the hummus on top of the toasted bread and place the veggie pastrami over the hummus.
  5. Gently add the tomatoes on top, and finish with an additional sprinkling of salt and pepper if necessary.
