Salty Sage Roasted Potatoes

Think of the perfect roasted potato. It's crispy on the outside, but fluffy and soft on the inside. Every family has a way of cooking roast potatoes that works perfectly for them, but I honestly believe that sometimes less is more. Roasting potatoes shouldn't be a complex process, and these salty sage roasted potatoes are honestly really good. They are just as crispy yet fluffy as other potatoes, but deliciously salty and herby with the sage, and perfect just served on their own.

Salty Sage Roasted Potatoes

Less is More

If you want to jazz this recipe up even more, then slices of roasted garlic, sprigs of rosemary and truffle salt are all great additions. However, I really want to stress just how delicious these are just with the ingredients mentioned above. Just the sage, smoked salt and balsamic vinegar-oil really do blend together so brilliantly, and will also fuse together with other recipes perfectly.

  • 3 tbsp extra virgin olive oil
  • 1 tsp balsamic vinegar
  • 1 tbsp smoked sea salt
  • 1 tbsp black peppercorns (ideally crushed)

Instructions

  1. Preheat your oven to 220°C / Fan 200°C / 430°F / Gas Mark 7.
  2. In a large saucepan, boil the new potatoes in some slightly salted water for roughly 20 minutes, or until the potatoes have slightly softened. Drain in a colander and leave to cool.
  3. In a large baking tray, place the olive oil with one of the sage sprigs and place in the oven for 10 minutes. After this time, take the baking tray out of the oven and stir in the balsamic vinegar, and add the potatoes and mix together well in the oil. Remove the sage leaves from the remaining sprig and roughly chop and sprinkle over the potatoes with half of the smoked salt. Place back in the oven for roughly 20-30 minutes until lovely and crispy.
  4. Remove the baking tray from the oven. Sprinkle over the remaining salt and and serve immediately.
