Salty Sage Roasted Potatoes

A different take on the classic English roasted potatoes, which is saltier, more crispier and extremely satisfying. The BEST roast potato ever.

Ingredients

  • 750g new potatoes
  • 2 sprigs of fresh sage leaves
  • 3 tbsp extra virgin olive oil
  • 1 tsp balsamic vinegar
  • 1 tbsp smoked sea salt
  • 1 tbsp black peppercorns (ideally crushed)

Instructions

  1. Preheat your oven to 220°C / Fan 200°C / 430°F / Gas Mark 7.
  2. In a large saucepan, boil the new potatoes in some slightly salted water for roughly 20 minutes, or until the potatoes have slightly softened. Drain in a colander and leave to cool.
  3. In a large baking tray, place the olive oil with one of the sage sprigs and place in the oven for 10 minutes. After this time, take the baking tray out of the oven and stir in the balsamic vinegar, and add the potatoes and mix together well in the oil. Remove the sage leaves from the remaining sprig and roughly chop and sprinkle over the potatoes with half of the smoked salt. Place back in the oven for roughly 20-30 minutes until lovely and crispy.
  4. Remove the baking tray from the oven. Sprinkle over the remaining salt and and serve immediately.
