Mango, Raspberry and Peanut Butter Chia Pots

God, these are good. Honestly, I absolutely adore these with my whole heart. These little breakfast pots combine three of my favourite foods, and they do it in a way that leaves me wanting more every single time. Work colleagues have seen me devouring these in under 5 minutes. I also make these for family members to have in the mornings and I get constant appreciative texts afterwards filled with phrases like "wow oh wow" and "I want more". They are so delicious, and perhaps even a slightly strange combination of flavours, but you must try them and make them because you have no idea how much you will enjoy them.

Go for the Very Best

Whilst I can't lie that I'm usually a slight snob when it come to selecting certain ingredients, I absolutely insist that there is only one peanut butter that is the right one to eat, and I also insist that it is the perfect blend for these chia pots. If you haven't already tried it, you must get Pip & Nut's 'The Ultimate Dark Roast' peanut butter - you can choose whether you want it with a smooth or crunchy consistency, but I'm telling you from the very bottom of my heart the it is the BEST peanut butter you will ever try. There is something bout the extra earthy and roasted flavour that is perfect with the raspberries, and the texture enjoyed with the creaminess of the yoghurt, oh it's something that I live for. I can hear you laughing now, but just wait until you try it...

Mango, Raspberry and Peanut Butter Chia Pots

Get ready to make one of the best breakfast pots you will ever eat in your life. Mango, Raspberry and Peanut Butter Chia Seed Pots - an utter mouthful, but perfect for on the go and filled with plenty of goodness, colour and protein!

Ingredients

  • 50g chia seeds
  • 80g oats
  • 2 scoops of vanilla protein powder (approx. 60g)
  • 1 tsp vanilla extract
  • 300ml milk (I use almond or oat)
  • 200g fresh mango, chopped into cubes
  • 100g raspberries
  • 2 tbsp greek yoghurt (I use Oatly's Vegan yoghurt)
  • 2 tbsp peanut butter

Instructions

  1. In a small bowl, mix together the chia seeds, oats, vanilla protein powder, vanilla extract and milk until everything is combined. If the mixture is still to clumpy, then add in an extra dash of milk or water until it's 'smooth'. Place the bowl in the fridge for 5-10 minutes, until the mixture has become gloopy and slicthyl thickened.
  2. Whether you're using jars for an on-the-go breakfast or bowls to enjoy at home, split the chia seed mix into two and serve with half of the mango and the raspberries. Serve with one tablespoon of the yoghurt, drizzle over a tablespoon of peanut butter over each bowl and enjoy.
