Greek-Style Rice Salad

Listen, I'm just like you. Occasionally I need quick lunches that I can just throw together, prepare and eat in under half an hour, but I still want those meals to be healthy and delicious. Why should you have to sacrifice flavour and health for time, right? So I'm in the process of trying to make your life as easy as possible and am coming up with some easy and quick lunchtime ideas that are packed full with flavour and nutrients, that I know you and your body will love. I know a lot of my audience love Mediterranean and Greek flavours, so I thought it would be good to dabble in these cuisines, and I'm super happy with the result. And even if you weren't asking, I've got another positive for you - this recipe comes in as under £3 to make per person!

Rainbow Food

Another reason why I love this recipe so much is that it's a perfect example of 'eating the rainbow', and so much research is being completed at the moment that shows that eating a mix of colourful foods in your diet can really boost your mental and nutritional health, is great for building up your gut microbiome and is also a much more seasonal way of eating. What's not to love about all of these benefits? All of these ingredients can be found in the most basic supermarkets and they are packed with an abundance of vitamins and minerals that your body will just eat out of your hands:

  • Red Onions - as well as being a great source of potassium (needed for healthy cellular function, nerve transmission and healthy kidney functions), onions contain antioxidants that fight oxidative damage. There are some that give red onions their beautiful colour, and these are suggested to help protect against diabetes and certain types of cancers!
  • Peppers - peppers are incredibly rich in plenty of vitamins such a B6, C, E and K which are all essential for blood clotting, making haemoglobin, the formation of red blood cells and increasing the absorption of iron in the gut, and are also a great source of fibre
  • Cucumber - being made up of roughly 96% water, cucumbers are great for promoting healthy digestion and supporting weight loss, and they are also rich in beneficial antioxidants.

Greek-Style Rice Salad

Ingredients

  • 1 red onion, chopped
  • 1/4 cucumber, chopped into cubes
  • 1/2 red pepper, chopped into cubes
  • 400g chickpeas, drained
  • 2 gloves of garlic, finely chopped
  • 10-15 sun-dried tomatoes, chopped
  • 3 tbsp kalamata olives
  • 100g feta cheese
  • 1 pack basmati rice (microwavable friendly)
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • 2 tbsp red wine vinegar

Instructions

  1. In a large bowl, mix together the chopped onion, cucumber, red pepper, chickpeas, sun-dried tomatoes, olives and garlic. Sprinkle over the dried herbs and mix again, making everything is completely combined.
  2. Cook the microwavable rice according to packet instructions. Pour the rice into the bowl and add the feta cheese and red wine vinegar and give everything a really good last mix, making sure everything is fully stirred.
  3. Serve the salad onto plates and enjoy immediately.
