Ingredients
- 1 red onion, chopped
- 1/4 cucumber, chopped into cubes
- 1/2 red pepper, chopped into cubes
- 400g chickpeas, drained
- 2 gloves of garlic, finely chopped
- 10-15 sun-dried tomatoes, chopped
- 3 tbsp kalamata olives
- 100g feta cheese
- 1 pack basmati rice (microwavable friendly)
- 1 tbsp dried basil
- 1 tbsp dried oregano
- 2 tbsp red wine vinegar
Instructions
- In a large bowl, mix together the chopped onion, cucumber, red pepper, chickpeas, sun-dried tomatoes, olives and garlic. Sprinkle over the dried herbs and mix again, making everything is completely combined.
- Cook the microwavable rice according to packet instructions. Pour the rice into the bowl and add the feta cheese and red wine vinegar and give everything a really good last mix, making sure everything is fully stirred.
- Serve the salad onto plates and enjoy immediately.
