Vegan Tofu Carbonara

Here We Go!

So today I’ve got a new recipe for you guys and it’s this super tasty vegan carbonara that uses silken tofu, roasted courgettes and garlic for a thick creamy sauce. It’s packed with protein, it’s a great source of vitamin B12 and can be on your table in under 15 minutes…and it's so delicious I cannot even begin to tell you. It definitely doesn't taste EXACTLY the same as a typical carbonara but it's pretty damn good and it has the power to convert anyone to loving plant-based carbonaras!! This recipe is perfect for those of you needing a quick meal to go and with it costing less than £2.50 per portion, this is a great midweek recipe for you all to enjoy.

Better than the classic?

Let's be honest - sometimes the ultimate classic Italian recipes are just too difficult and take too much time to make at home on a standard Wednesday evening. (It's ok, I'll admit this for you!) Often during the week I'm finding that with life being so busy I need something quick to put on the table, and I so want to make sure I'm still eating and feeding others with food that is nutritiously abundant and delicious, whilst stilling hitting all the necessary goals - whether this is being high in protein or gluten-free. And this is why I love this recipe so much because it does all of these things and more...just look at these ingredients:

  • Courgettes - courgettes are high in Vitamin A and antioxidants that we need to help to support our vision and immune system, and also a great source of fibre that helps to contribute towards keeping our guts happy and healthy, and lowering our blood sugar levels.
  • Nutritional Yeast - known for being a fantastic source of Vitamin B12 (which vegans and those on a plant-based diet need to make sure they are having), nutritional yeast can help our bodies to maintain a healthy metabolism and boost our energy levels. Nutritional Yeast also contains all of the nine essential amino acids, making it a complete protein, which is essential for helping to prevent muscle loss, the function of tissue repair and helping with the absorption of various nutrients.
  • Silken Tofu - Tofu is also another source of a complete protein that is plant-based and is rich in minerals such as calcium, manganese, iron and vitamin A, nutrients that are needed for keeping our bones and teeth healthy and strong, aiding the production of red blood cells and protecting our body from oxidative stress.

What's not to like, right? This recipe would be a great recipe to make for those who are wanting to try Veganuary or are interested in meat-free meals that are still high in protein - and I promise you that they won't be disappointed!

Vegan Tofu Carbonara

The creamiest carbonara you will ever eat - and you would never know that it's vegan, high in protein and contains hidden veggies!!

Ingredients

  • 1 courgette
  • 1/4 - 1/2 garlic bulb (depending on garlicky you like your meals...)
  • 300g silken tofu
  • 2 tbsp nutritional yeast
  • 200g gluten-free tagliatelle (I use Sainsbury's own gluten-free)
  • 75g vegan bacon lardons (I used 'La Vie Plant Based Streaky Bacon Larsons SMoked' but you can use any you prefer!)
  • 30g Vegan parmesan cheese
  • Extra Virgin Olive Oil
  • Salt & Pepper

Instructions

  1. Preheat your oven to 200°C / 400°F / Gas Mark 6.
  2. Peel your courgette and chop into chunks and place in a small baking tray, drizzling with olive oil and some salt and pepper. Wrap the garlic bulb drizzled in some olive oil in some aluminium foil and place in the baking tray, and then place the tray in the oven to roast for roughly 15-20 minutes, or until the courgette has started to brown ever so slightly.
  3. Get your kettle on and pour into a saucepan, and once the water is boiling add the pasta and cook according to packet instructions. Save 1-2 ladles worth of the pasta water, and then drain the tagliatelle.
  4. Cook the veggie bacon lardons according to packet instruction until golden and crispy.
  5. In a blender, mix together the silken tofu, the nutritional yeast, the roasted courgette and garlic, 1 tbsp olive oil and season with salt and pepper. Add in the pasta water as necessary, making sure that the sauce stays relatively thick and creamy.
  6. Place the sauce back into the saucepan that cooked the pasta and heat up for roughly 5 minutes. Mix in the cooked tagliatelle, stir in the bacon lardons and serve onto a plate. Sprinkle over the grated vegan parmesan and serve with an extra seasoning of salt and pepper.
