Sometimes, particularly on the weekend, I like to just batch cook a mixture of different vegetables and cover them with crumbles of cheese and a generous drizzle of a version of chilli sauce. It's super simple, super delicious and super comforting. Sometimes I serve this with pasta, sometimes it's homemade chips, but quite often I love to save it with some put pastry and make it all into a tart. And even better, the pastry is gluten-free, ready-made and really quick to cook, so it makes mid-week or evening dinners so much easier and saves so much time. I've made this tart with some friends a number of times and they've been so surprised each time about how easy this recipe is to make, and it serves a lot, so I can't wait to share it with you guys.
I know it's snobby of me to say so, but this recipe really is a good one. I know you will absolutely love it. Another thing that I love about this dish is it's so colourful, and most of the brightness (and the flavour) comes from the vegetables themselves. People always say you should try to eat a rainbow of colours in every meal, and this tart certainly delivers! There is so much goodness, and there's also secret ingredients such as dried herbs and apple cider vinegar, to really help give you gut and body the kick of health that it will really appreciate.
And also, as a side note, make sure you choose the ingredients wisely if you can. As I'm gluten and cow's milk free, I've gone for alternatives that suit my particular diet, but you can use any other favourites that you wish to use. I also swear by two certain brands for the chilli jam and apple cider vinegar:
Chilli Jam - I promise to you, that you should ONLY be using Tracklement's Chilli Jam. It's the absolute best and no other varieties even come close. It's a multi-award winner (which already says it all) but it's so super versatile and is the perfect blend of chillies and peppers. You can use a little bit and not feel overpowered by the heat, but add more and more to give you that extra kick if you want. Honestly, this is the only chilli jam I've ever used for about 4 years and I buy at least three jars every time.
Apple Cider Vinegar - I'm very aware that apple-cider vinegar is a hot topic and there are so many good brands out there, but I always use Willy Chase's ACV variety. Not only is it unfiltered, but it is 100% raw and contains a live mother probiotic that is sourced from the companies 300-year old orchards. It's completely organic and has a flavour unlike all of the other apple-cider vinegars I've tried. Plus, it's great to know that you're supporting a UK company too.
