Cashew and Chocolate Stuffed Dates

Before I started eating mainly plant based, I used to love biscoff. Sometimes I still dream about it and really miss that salty, caramelised biscuit flavour that used to come with every spoonful...so I decided to try and make a vegan version. I also was recently introduced to cashew butter and never realised the flavours were actually so similar - all you needed was some cinnamon, maple syrup and salt and you're practically there!! In this recipe I use a good amount of cinnamon as I personally love the flavour, but I'm very aware that some people may wish to tone this down slightly so you can add as much of the spice as you want. Just make sure that there's a good amount of ground salt and you'll be drooling - especially when devoured with the dark chocolate...I'm warning you now, they're dangerously good!

Nothing Like a Sweet Treat

It seems to be the way of the world that quite often the really dangerously delicious foods need to be consumed slightly in moderation, and I have to admit that these are one of those recipes. Due to being a dried fruit, you only need to consume no more than three dates a day without going over the sensible limit (remember too many can have laxative effects!!!), and they have been stuffed with nut butter and chocolate. BUT, life is worth living and every human being occasionally needs a bite of something sweet, and what's a better way than still trying to make a healthy effort, right? As the experts say, everything in moderation, and these are definitely included - you may (like me) just have to work on your discipline a bit more when it comes to these!!!

Healthy eating + a craving for biscoff and chocolate + something gooey = these cashew and chocolate stuffed dates!

Ingredients

  • 400g dates (medjool are better but any will do)
  • 60g cashew butter
  • 2 tbsp maple syrup (or 3 tablespoon of honey)
  • 2 tsp ground sweet cinnamon
  • 1 tsp Himalayan sea salt
  • 100g dark chocolate, melted

Instructions

  1. Boil a kettle full of water and melt the chocolate in a bowl over a saucepan of boiling water until it has fully melted.
  2. Gently remove the stones and any rough tops from the medjool dates and cut in half.
  3. In a small bowl, mix together the cashew butter, maple syrup, ground sweet cinnamon and salt until everything has combined, and using a teaspoon or small spoon, scoop a spoon's worth of the butter mixture into each date.
  4. Dunk the dates individually into the melted chocolate and place on a plate. Once every date has been coated in the chocolate, sprinkle over some more salt and then place the plate in the fridge to cool for roughly 10-20 minutes until the chocolate has hardened.
