I LOVE a good Caesar salad. I actually love any good salad but my version of a Caesar salad is one of my favourites. It's one of the recipes that I've experimented with over many years but this, for me, couldn't get any better. The garlic bread croutons seriously make the salad what it is, and the salty halloumi, the crispy nut mix and the creamy eggs just work together so well. Finished with sweet chilli sauce, it's a serious win - I'm personally not a fan of the traditional Caesar salad dressing, and this just adds a sweet heat that brings out the flavours of all the other ingredients. It can also be rustled up in under 20 minutes, so it's perfect for quick lunches or weekday evenings when you haven't got much time.
If you're still reading, it means you're not thinking that my idea for this salad is crazy. And for this I'm clapping you because once you try it you will seriously love it. But feel free to switch this up in any way you want to: if you're vegan, then you can remove the eggs and halloumi and go for a vegan cheese alternative. If you're allergic to nuts you cn swap for anything else that may be better for you. Feel free to make it your own, but trust me when I'm telling you that all these components mixed together work really really well.
This is an unusual twist on the classic recipe but it's oh so good. You've got salty halloumi, crispy garlic bread croutons and a drizzle of sweet chilli sauce, on top of fresh, colourful and delicious veg. It's one of the best lunches around...
