Oh yum I love this recipe so much. This is one of those meals that I make if I need to throw a recipe together and leave it to cook in the oven whilst I get on with chores or finish working, as it's so simple and easy to prepare but does need slightly longer to cook. I also tend to switch up the additional sauces and drizzles each time, so it's slightly different every time I make it but it always tastes amazing. If you're like me, you loooove Italian food (the extra 'o's there are completely necessary!), but the freshness of their ingredients and authentic day-to-day dining is something I often try to recreate at home and this is a perfect example, with the exception of veggie sausages! If you've got the time (and skill) to make the tortelloni pasta at home then please do got for it, but for convenience's sake I often buy mine from the supermarket as it just does make everything so much quicker and easier, but doesn't affect the flavour in any way.
What I also love about this particular recipe is that there are many different ways to switch it up in order to suit any diet that you may currently be experimenting with. The sausages, tortelloni, feta cheese can all be adapted in order to suit your personal preferences - they do some amazing gluten-free and dairy free meat alternatives and stuffed pastas now (try Sainsbury's for these!) as well as dairy-free or cow's milk-free feta cheeses. If you do eat meat then you can choose meat sausages but it would be a much better choice to try the vegetarian versions. Linda McCartney, THIS and Plant Pioneers do some really great varieties, but again, if you have another meat-free favourite then go with these. This is the fun part of cooking, you can be versatile and make things your own - be creative!
This is such a delicious traybake to make for dinners during the week, and will transport your tastebuds to the Italy with the freshness, colour and flavour of all the traditional ingredients of a proper Mediterranean feast!!
