Veggie Chicken, Pesto Bean and Feta Tortilla Pizzas

If you know me well you'll know that I love pizza, and when I say I love pizza, I LOOVVEEE it. (Capital letters absolutely necessary). I get very excited over a good pizza. It's everything I crave - the Mediterranean flavours of the garlic and tomatoes, the fresh greenery of the basil leaves, the stringy-oozy cheese...oomph, it's so good. However, I haven't got a pizza stove oven, and I also (more importantly) don't have time to make the dough, shape the dough, pre-bake, then finish with the toppings, cook and slice and then eat during the week. I'm just like you, I need something fast, straightforward to make and that's going to taste just as delicious. That's why I really like making these homemade tortilla pizzas. Everything can be ready in under 20 minutes, you get all the same flavours but the pizzas are also just a bit lighter to digest (another bonus!). I probably make these about twice a fortnight!

Fun with a capital 'f'

I really can't stress how good these are to make, and they are so versatile. You could choose any toppings you like and cook the pizzas exactly the same way. (Keep an eye out for future recipes; I'm talking olives, goats cheese, eggs, barbecue veggie chicken...you name it, it's coming!!) I love to make these pizzas when I've got friends round, as it turns into a slightly creative competition, and it's just fun to see what everyone does. If you don't want to use real cheese, you can use plant-based alternatives too, and you can switch up the style of the tortillas to suit your personal preferences. For example, we love to use wholemeal tortillas in the Christie household, but you may prefer something different. It's all about just trying different things and seeing what you like, and more importantly, having fun!!!

Veggie Chicken, Pesto Bean and Feta Tortilla Pizzas

High in protein, extremely tasty and so quick and easy to make, these tortilla pizzas are so perfect for mid-week dinners, when you've got less than half an hour. Everything you'd want from a 'normal' pizza, but lighter and more satisfying!

Ingredients

  • 2 tortilla wraps
  • 100g passata
  • 1 garlic clove, finely chopped
  • 100g tinned beans (I love using mixed beans, cannelloni or black beans)
  • 1 tbsp pesto
  • 6 cherry tomatoes, halved
  • 20g feta cheese
  • 30g mozzarella cheese
  • 1 tsp dried oregano
  • 50g veggie chicken pieces
  • Extra: fresh basil leaves, balsamic vinegar, extra sprinkling of dried oregano

Instructions

  1. Preheat your oven to 200°C / Fan 180°C / 375°F / Gas Mark 6.
  2. In a small bowl, mix together the passata, finely chopped garlic and half of the dried oregano.
  3. On a large baking tray lined with some parchment paper, lay one of the tortilla wraps down. Spoon 3 tablespoons worth of the passata mixture and spread across the wrap, and then place the other tortilla on top. Spread the remaining passata mixture over, leaving about half a centimetres width free around the edge.
  4. In another small bowl, mix together the tinned beans and the pesto until the beans are completely coated. Gently dollop the mixture evenly around the tortilla pizza.
  5. Evenly distribute the halved tomatoes, veggie chicken and feta cheese on the tortilla pizza, and finish with the mozzarella cheese. Sprinkle over the remaining dried oregano and place in the oven for 10-15 minutes, or until the cheese is golden and bubbling. (The veggie chicken and beans should also be slightly browned and cooked all the way through!)
  6. Place the pizza onto a large plate and sprinkle some fresh basil leaves on top. (I think they're particularly great when finished with a tiny drizzle of balsamic vinegar too...)
