Vegan Pepperoni Cabbage Pizza Slices

I get asked A LOT for low carb recipes, and I also get asked a lot for advice on how to make the 'classic pizza recipes" vegan or vegetarian, so I thought I would combine the two ideas together. And you all absolutely loved the cauliflower pizza recipes so much that I thought we should try another vegetable, so here we are using Savoy Cabbage. Now it may sound daft, and it's definitely a bit out of the ordinary for a pizza, but you'll be surprised at just how tasty these are!

Not only are they really versatile to use and fascinating to look at (!!), but they are great for cutting into thick slices and using as bases for pizzas - and especially paired with a freshly made tomato sauce, some smoky pepperoni pieces and melted cheese, you'll be in plant-based food heaven!

Perfect for January

Cabbage seems to be one of those vegetables that can be used for absolutely everything, and now I totally see why! And why do they have to have such a boring reputation? And when January hits and we've all lost our drive and inspiration slightly, this is a great recipe to make in order to try something new and exciting. And even better - this is a fantastic recipe to make with smaller helping hands as they are such fun to cover with all the toppings. Perfect as a lighter lunch or a healthy snack, you can feel free to change the toppings and flavours as you wish!

  • Savoy Cabbage - a great form of high-quality plant-based protein, Savoy Cabbage is also rich in Vitamin C which helps to make collagen in the body (which helps to give structure and flexibility to our skin) and protect our bodies against heart disease, certain cancers and vision loss, as well as vitamin B6 and folate, both of which are important for many processes in the body, such as energy metabolism and the healthy functioning of the nervous system.
  • Tomatoes - tomatoes are a great source of vitamin K and are also filled with carotenoids which contribute towards healthy eyes and skin. They are also rich in potassium which is associated to lowering rates of stroke and heart disease when digested in sufficient quantities
  • Garlic - well known for it's anti-viral properties, garlic contains vitamins C and B6, and manganese (which is needed in the production of sex hormones and for healthy bone and nerve development) and selenium (which helps your body to fight off infections and keep our immune systems strong). There are some studies that suggest that increased amounts of garlic could help to reduce high blood pressure levels, but more research is needed on this....

Vegan Pepperoni Cabbage Pizza Slices

A healthier and cheaper alternative to shop-bought pizzas you say??? I'm in!

Ingredients

  • 1 savoy cabbage
  • 5-6 tbsp extra virgin olive oil
  • 2 tsp dried basil
  • 2 tsp dried oregano
  • 1 roasted red pepper
  • 1 tin of tomatoes
  • 1 tsp smoked paprika
  • 2 cloves garlic
  • 150g vegan cheese (I use a mixture of plain vegan cheddar and smoked applewood cheddar, but use any you prefer)
  • 100g vegan Quorn Pepperoni
  • Salt & Pepper
  • Additionally: Fresh Basil

Instructions

  1. Preheat your oven to 200°C / 400°F / Gas Mark 6.
  2. This is where you want to chop your cabbage into thick slices (roughly 2cm thick). (If I were you, I would cut out the thick white chunky stalk at the very bottom as this part tends to be very bitter and crunchy!) You normally get 4-5 slices out of the cabbage. Place these carnage slices on a flat oven tray.
  3. In a small bowl mix together the olive oil, 1 tsp of the dried basil, 1 tsp of the dried oregano and some salt and pepper and then drizzle this over the cabbage slices, making sure each one is coated well. (If you feel like you might need to add more olive oil then feel free to do so!). Place the oven tray into your warm oven to roast for roughly 10-15 minutes until the cabbage looks like it has softened slightly.
  4. In a small blender mix the roasted red pepper, tin of tomatoes, the remaining dried basil and dried oregano, smoked paprika and garlic together and season with salt and pepper if needed. The sauce should be relatively thick but smooth.
  5. Remove the cabbage slices out of the oven and cover each slice with roughly 4 tablespoons worth of the tomato sauce - each one should be smothered in sauce! Sprinkle over the grated vegan cheese and then layer over the slices of vegan pepperoni (giving approximately each slice 4 slices of pepperoni each).
  6. Place the cabbage pizza slices in the oven to cook for a further 10 minutes or until the cheese is bubbling and melted and then leave to cool for a couple of minutes.
  7. Serve immediately, especially with some fresh basil leaves on top.
