Superfood Chocolate Bark

So, unless you hadn't been able to tell, I'm hugely into healthy snacks - I'm talking different types of fruits, nut and trail mixes, dips and spreads, the list goes on. I'm also a sucker for some dark chocolate, especially when it gets to mid afternoon and you just need something to keep you going for the rest of the day. So I thought, why not find a way of combing everything all into one? This chocolate bark does exactly that, whilst also being a bright and colourful distraction. It's crunchy and chewy, sweet and salty and great for sharing with friends during a work break (if you're in a generous mood!!)

You may laugh at how completely expected this is, but when I tell you that I haven't gone light on the topping, I seriously mean that I have not gone light on the topping! I wanted the bark to be a strong mixture of half chocolate, half topping and I have made countless versions to get to this particular one. (Go hard or go home, right?) The good thing though is that every single one of these topping ingredients is beneficial for you in numerous ways, which is why I have called it my 'Superfood Chocolate Bark'. Here's just a couple of examples:

  • Goji Berries - containing almost ten times the antioxidant capacity as blueberries, Goji Berries can help to promote healthy eye and immune system health, improve memory and build muscle, whilst also preventing the inflammation that causes sore muscles.
  • Brown Linseeds - known for their high omega-3 content, Linseeds are beneficial for healthy eye, joints and brain health and can also help to lower the risks of strokes and heart attacks due to lowering the number of 'undesirable' fats in the blood.
  • Pistachios - filled with antioxidants and minerals such as potassium, calcium, zinc and magnesium, Pistachios are high in plant-based compounds that help to improve your immune system and reduce risks of cancer.

Honestly, the list goes on, and these are just a few...So despite this snack still being chocolate based, and topped with nuts, it's a healthier choice for a snack or sweet treat, and it contains many nutrients and antioxidants that your body is going to largely thank you for. Superfood Chocolate Bark

The definition of a healthy treat right here: it's chocolatey, crunchy and colourful. This Superfood Chocolate Bark will give you a real boost, whilst make your tastebuds dance at the same time.

Ingredients

  • 200g dark chocolate (at least 70%)
  • 1 tsp vanilla extract
  • 2 tbsp chia seeds
  • 2 tbsp flax seeds, milled
  • 2 tbsp brown linseeds
  • 300ml Oatly Chocolate Milk
  • 35g goji berries
  • 15g dried mulberries
  • 25g dried goldenberries
  • 20g pumpkin seeds
  • 20g sunflower seeds
  • 10g sesame seeds
  • 1 tbsp pistachios, chopped
  • 1 tbsp hazelnuts, chopped
  • 30g salted dreid pretzels, halved

Instructions

  1. In a small bowl over a saucepan of boiling water, melt the dark chocolate and add in the vanila extract and chocolate milk. Once completely melted, take the small bowl away from the saucepan and mix in the chia seeds, milled flax seeds and linseeds and spread over a baking tray. Make sure the mixture is evenly spread, and place in the fridge to cool for five minutes.
  2. In a larger bowl, mix together all the rest of the ingredients to form a nutty topping. (I always make sure that there are no clumps here or pieces that are too big, so sometimes I end up chopping up a few pieces of nuts...)
  3. Take the chocolate mixture out of the fridge and sprinkle over the nut and seed mix, making sure that there is no chocolate showing. Place back in the fridge and refrigerate for another 45 minutes until the bark has completed cooled and hardened slightly. (If you wish, you could always place the bark in the freezer for a short period of time, but make sure you leave it out for a bit before you eat it.)
