Rhubarb and Elderflower Compote

It's the time where spring is turning into summer, and elderflower and rhubarb is so abundant you feel like it's everywhere. There's only one thing to do - you've got to make this compote. Honestly, I insist. Not only will you seriously fall in love, but your breakfasts, puddings, snacks (whatever, whenever) will be made so much better with it.

Summer Sweetness

This is one of the first recipes I asked my family and friends to try, and every single one requested the recipe straight afterwards. When I told them how simple it was to make and how natural the recipe is, they just couldn't believe it. Now I give it as gifts or 'thank you' presents because it is so loved and appreciated. You really don't need much, and it's such an amazing feeling to know that you can use some of the most natural ingredients to create something so delicious (and beautiful too). It's also extra special due to being a seasonal recipe, so make the most of it when you can.

Rhubarb and Elderflower Compote

Fresh and fruity compote. Rhubarb and elderflower. Unusual flavours that work so unbelievably well together - it's worth being crazy sometimes!

Ingredients

  • 750g rhubarb, roughly chopped
  • 64g sugar (coconut, muscovado, caster)
  • 1/4 lemon zest
  • 2 tsp vanilla extract
  • 1 vanilla pod or 2 tsp vanilla bean paste
  • 2 tbsp elderflower cordial
  • 100ml water

Instructions

  1. In a large saucepan (it needs to be large!), place all the ingredients in and gently mix to make sure the rhubarb is coated by the sugary and zesty liquid.
  2. Cook over a medium heat for roughly 30 minutes, or until the rhubarb had softened and is now forming a slushy mixture. (Make sure you occasionally stir the mixture to keep it from sticking to the bottom of the saucepan!)
  3. Leave to cool for roughly 20 minutes until the compote has thickened, and transfer into jars.
