Nutty Chocolate Granola

I'm honestly such a granola girl. I don't often choose a super sweet recipe, but I do love some granola sprinkled on top of berries and fruit on plant-based yoghurt. It's almost a comfort ingredient for me, as sometimes I'll have it for a snack or sprinkled over vegan yoghurt too (I'm telling you now I'll find a way to eat it with everything!!) However, when you look at the sugar levels and ingredients of shop-sold granolas, the nutrition is often very poor and the fats and sugar content can be quite scary. Making it at home though completely removes these things and 100% every time tastes SO much better. What's not to love, a healthier granola that's been made with loving hands and will boost your gut health?

Whole Goodness

The great thing about this recipe is that it will satisfy so many things. Firstly, it's filled with plant-based foods that will nourish your body, provide you with plenty of minerals and vitamins you need AND is a (smaller) source of protein. Secondly, the range of nuts and seeds here will massively help to boost your gut microbiome health, which is something that absolutely everyone will benefit from. Thirdly, you're satisfying your sweet tooth, at whatever time of day you are eating it. And lastly, it's so quick and easy to make and it makes your whole house smell so delicious, as if you've been baking and the caramelised flavour is spreading across your kitchen. And if all these reasons weren't enough already to tempt you into making this granola, then the nutrients involved in these ingredients surely will:

  • Almonds - not only are almonds rich in antioxidants that help to protect the body from free-radicals, they are high in magnesium (a mineral involved in more than 300 bodily processes), Vitamin E (needed to help protect your cells in your body) and Zinc, and can help to lower the bad cholesterol levels in the body, reducing risks of developing heart disease.
  • Walnuts - walnuts are high in protein and a great source of heart-healthy fats, and they contain more omega-3 fatty acids than any other nut!
  • Brazil Nuts - Brazil nuts are one of the best sources of Selenium, which is an essential mineral that supports thyroid health and protects the body from infection, and are filled with antioxidants, Vitamin E and healthy fats

Nutty Chocolate Granola

A crunchy and chocolately cracking choice for breakfast, especially when served with some fresh berries and plant-based yoghurt. Yum!

Ingredients

  • 100g gluten-free oats
  • 150g mixed nuts (I use almonds, pecans, Brazil nuts and walnuts)
  • 130g raisins
  • 80g mixed seeds (I use pumpkin, sunflower, chia and linseeds)
  • 2 tbsp coconut oil
  • 1-2 tbsp honey
  • 1 tsp vanilla extract
  • 1/2 tsp ground sweet cinnamon
  • 70g dark chocolate
  • Sea Salt

Instructions

  1. Preheat your oven to 200°C / 400°F / Gas Mark 6.
  2. In a saucepan melt together the coconut oil, honey, vanilla extract and ground sweet cinnamon and stir until everything is combined.
  3. Place the gluten-free oats, mixed nuts, raisins and mixed seeds into a large bowl and stir until the dried ingredients are mixed and then drizzle over the melted combination. Give everything a really good stir, making sure all the dried ingredients are covered with the honey mixture and spread out evenly over a baking tray. Sprinkle with some sea salt.
  4. Place the baking tray in the oven and cook for 20 minutes, turning and stirring the mixture every 5 minutes. If you want to remove the granola from the oven any time before the 20 minutes is up then please do.
  5. Once cooked, place the granola baking tray on the side and leave to completely cool. Once cold, mix in the chunks of dark chocolate and place in a storage container to eat throughout the week.
