Mini Chocolate Crunch Crumbles

It may be because I've grown up in England and family gatherings always tend to somehow end up involving one of these, but boy oh boy do I love a good crumble. In my head I always like to think it's a healthier dessert (it's fruit!!) but I know it's not actually so. With this in mind, I wanted to try and create my own version that was genuinely nutritious, quick and easy to make, but with a slight naughty side that will still satisfy every sweet tooth. And voila...my mini chocolate crunch crumbles. And at the end of the day, what’s better than crumbles and vanilla ice cream, with a touch of chocolate crunch right?

Genuine goodness

So you may not believe me when I say that I've really tried to make these as healthy as I can. Obviously there's still natural sugars and a bit of chocolate, but life is worth living sometimes. More importantly, you're getting amazing nutrients and the following vitamins and minerals from at the different ingredients included, and you're making the most of seasonal produce that's on offer. All of these ingredients can contribute towards so many important processes in your body, and to think that you're helping to fulfil these through eating good food is a HUGE bonus:

  • Peaches and nectarines (stone fruits) - these are great sources of vitamin C (which helps to boost your immune system), potassium, calcium, fibre and iron.
  • Almonds - rich in antioxidants, high in protein and a great source of protein, almonds are a source of zinc, magnesium and vitamin E which help to protect cells from oxidative damage, lower high levels of blood pressure and help to control blood sugar levels.
  • Walnuts - an excellent source of omega-3 and heart-healthy fats.
  • Honey - it's so beneficial if you can use local and as un-processed as possible here (I'm warning you it may be slightly more expensive as a result) as good honey is filled with nutrients and antioxidants, is suggested to lower blood sugar levels and can be great for healing wounds (and burns!)
  • Dark chocolate - suggested to improve brain function and is incredibly nutritious (a great source of potassium, phosphorus, zinc, selenium, iron, magnesium, copper and manganese) - but make sure you choose a good quality version that is 70% and plus.

So what are you waiting for? Healthy (or as much as they possibly can be), delicious and satisfying mini crumbles, perfect for the upcoming season and for whipping up when people come for dinner. Who doesn't love a good crumble???

Mini Chocolate Crunch Crumbles

Sweet, oozy and yummy mini crumbles that are nutritious and all of healthy fats that your body and brain will LOVE.

Ingredients

  • 6 peaches, halved
  • 6 necatarines, halved
  • 3 tbsp coconut oil
  • 2 tbsp honey
  • 2 tbsp golden syrup (or 4 tbsp maple syrup)
  • 1 tsp vanilla extract
  • 100g oats
  • 75g flaked almonds
  • 50g walnuts, finely chopped
  • 100g dark chocolate (70% or more please!)
  • Additional: salt, vanilla ice cream...

Instructions

  1. Preheat your oven to 220°C / 428°F / Gas Mark 7.
  2. Place the halved stone fruits into a baking dish and leave to the side. At this point is is best to also remove the stones if you haven't before.
  3. In a small saucepan, place 2 tbsp of the coconut oil, the golden syrup, honey and sprinkle of salt into the pan and melt over a medium heat until everything has melted. Mix together and add at the vanilla extract, stirring gently in.
  4. In a small bowl, mix together the oats, flaked almonds and chopped walnuts until everything is combined, and then drizzle over two tablespoons worth of the melted mix, stirring in.
  5. Drizzle the rest of the melted mix over the stone fruits evenly, and then place the baking dish in the oven to roast for 20-30 minutes, or until the fruits have softened and caramelised around the edges.
  6. Place the crumble topping in another baking dish, spreading evenly and then place in the oven to cook for roughly 5-10 minutes, or until the topping has turned golden brown and smelling like flapjack. Remove immediately.
  7. In a small saucepan, melt the remaining tablespoon of coconut oil along with the dark chocolate and a sprinkling of sea salt until completely smooth. Spoon in the crumble topping and mix together.
  8. Remove the stone fruits from the oven and gently spoon over a tablespoons worth of the chocolate crumble topping mixture over each halved fruit. Place back in the oven to cook for a further 5-10 minutes. Remove and serve with some generous scoops of ice cream (my particular favourite is vanilla ice cream but salted caramel works really well too...)
