Mango Fro-Yo Sundae Bowl

For those of who you need cooling down in the summer weather and are trying to find healthier, lighter desserts of sweet treats...I've got you! My Mango Fro-Yo Sundae Bowl is a pudding of dreams when the weather gets hotter by the day, you need something to seriously cool you down (because it's. already. getting. too. hot) but you're after something fruity, sweet, something that's going to slightly tingle your taste buds. And who doesn't love the flavour of mangoes and passionfruit, right? Or doesn't mind a good cookie now and then? (if you're not either of those people you're going to have to win me over another way!!) This dessert combines all of those things together, and with some fresh strawberries, you're actually dreaming. It's perfect for this time of year, I know you're going to love it!

Dessert of Dreams

Not only is this dessert super duper tasty, but it's also ridiculously easy to make. It might actually astound you or make you laugh - there's the idea that making ice cream or frozen yoghurt is super complicated and you need fancy machinery to make it, but this so isn't the case. The only equipment you will need is a food processor or blender (and these don't have to be big - mine is very small) and a baking tin that you would bake bread or loaf cakes in. That's it! Super simple!

You may also be slightly concerned with the ingredient of mango puree, but please don't fret. Whilst most supermarkets and health stores often sell some version of it, if you can't find it you can use any other mango sorbet or mango smoothie ice lollies, these will work perfectly fine! (When I can't find any mango puree I often use 'Del Monte's Mango Smoothie' lollies, as one of these is the perfect amount to bring extra flavour and thickness to the mixture.) This recipe is also completely adaptable, so if you ever feel like adding more or less of anything it's up to you...have fun with it, it's a sundae bowl after all!

And as always, I know you like to be informed of the health properties of the recipe, so here you go!

  • Mangoes - filled with nutrients that promote healthy eye and heart health (magnesium, potassium, vitamin E and several of the B vitamins), will boost your immune system (vitamins A and C) and is a great source of fibre and polyphenols that will protect your body from oxidative stress and radical damage within the cells.
  • Passionfruits - passionfruit is a fantastic source of a phytonutrient called piceatannol, which is said to help increase the moisture content in your skin and help to reduce blood glucose levels in your body, and vitamins C and A and fibre which is important for keeping our gut healthy and preventing constipation.
  • Strawberries - strawberries have a low glycemic index which is beneficial for weight management and for reducing the risk of obesity-related incidences, and are also a great way of filling your body with the vitamins C, B9, B6, K and E that it needs for healthy functioning, keeping your immune system high and providing cells can function and repair properly.

Mango Fro-Yo Sundae Bowl

Mangoes + frozen yoghurt + cookies = your favourite summer flavours all in a cooling sundae bowl. Perfect? I think so!

Ingredients

  • 300g fresh mango, chopped
  • 100ml passionfruit juice
  • 10ml orange juice
  • 3 passionfruits
  • 350g greek yoghurt (I use Oatley's Greek Yoghurt)
  • 100g mango puree (or mango smoothie sorbet/ice creams if you can't find the puree!)
  • Splash of lime juice
  • 4-5 chocolate chip cookies (homemade of store-bought, its up to you)
  • Handful of fresh strawberries

Instructions

  1. In a blender of food processor, blend the chopped fresh mango and the passionfruit juice together until they form a soft puree.
  2. Mix in the greek yoghurt, orange juice, 2 of the fresh passionfruit and the mango puree and blend until everything is fully mixed in. Important - taste here. If the passionfruit is still quite bitter then add a splash of lime juice or add some more fresh mango or mango puree (keep experimenting until you hit the right flavour).
  3. Pour the yoghurt mixture into a bread-style baking tin and place in the freezer to chill for at least 6 hours, or preferably overnight.
  4. Once frozen, take the frozen yoghurt out of the freezer and spoon three scoops into a bowl. Crumble over your cookies of choice (I use one for each bowl) and drizzle over the remaining fresh passionfruit pulp. Throw in some chopped fresh strawberries and enjoy.
