Honeyed Fig and Bacon Rolls

These little rolls are just so super awesome. Think of them like a sausage roll, but instead they are so much more succulent, sweeter, healthier...just all round better. Also, when I tell you just how easy they are to make, you won't believe me because they are honestly so effortless. Although they are slightly extravagant for a snack (I appreciate you wouldn't normally have figs in the kitchen) it's unquestionably worth going the extra mile for this recipe.

Now, I will warn you in advance, it's very tempting to eat more than your fair share of these little rolls, as they are so fantastic. However, due to their beautiful golden colour and extraordinary contrast with served fresh figs, it's a lovely and kind gesture to share these with the people you love the most (or just happen to be with at the time). I'd go the extra mile and serve with some fresh herbs, but you won't anything else, as it will take away the flavour. Just relax, give and serve and sit back with a wide smug smile (and watch people lose their minds over a luscious snack, that isn't made of meat!)

Honeyed Fig and Bacon Rolls

A delightfully tender and teasingly extravagant snack, that's ready to eat in under 30 minutes and stupidly easy to cook. It's my new fave!

Ingredients

  • 1 tbsp soft cheese
  • 1 tbsp honey (preferably runny!), plus extra for drizzling
  • 2 figs, cut into quarters
  • 1 pack of veggie bacon (ideally 6-8 rashers)
  • 4 fresh sage leaves, finely chopped
  • 1 sprig fresh rosemary, finely chopped
  • 1 tbsp extra virgin olive oil
  • Sprinkle of salt

Instructions

  1. Preheat your oven to 200°C / 400°F / Fan 180°C / Gas Mark 6.
  2. In a small bowl mix together the soft cheese, honey, fresh sage eaves and chopped rosemary with a sprinkling of salt until everything is combined. The mixture should be quick thick!
  3. Lay the bacon rashers out on a chopping board and spread out a tbsp of the honeyed cheese mix along each one. Then place one of the fig quarters on top, towards one of the corners, and starting at this end, roll the bacon rasher around the fig.
  4. In a hot saucepan, add the olive oil and wait until the oil is hot. Then gently place the bacon rolls and cook on both sides of the rolls for roughly 4 minutes on each side. (Be quite gentle here, as the rolls can come undone if you do this too quickly).
  5. Place the bacon rolls on a baking tray, lined with greaseproof paper, and drizzle over the extra honey and sprinkling of sea salt and bake in the oven for roughly 5-10 minutes until golden and moist. Serve immediately!
