Homemade Fancy Fries

Chips are nearly everyone's favourite side dish, right? Whether they're thin and crispy like fries, or chunky yet fluffy like pub chips, nearly every single person will reach for a few too many, especially when freshly cooked and still hot. However cooking your own chips at home is so much better, both for your body and for flavour. Not only do you instantly use half the amount of cooking oil, but you can season them however you wish, and completely switch up the game - which is what I've done here. Inspired by Greek Gyros chips, these are seasoned with Mediterranean herbs but finished with the sharp tang of crumbled feta, and they are so delicious.

You can't go wrong with a good chip

As given from the name, these chips are fancier that "normal" chips, but they really are good. (FYI, they make games nights and movie nights so much more exciting.) The particular combination of herbs is truly great, but you could always switch these up if you were feeling particularly wild - adding chilli flakes would always be a good idea if you can handle the heat. Not only can they be finished in less than an hour, but they are so easy to make that guest will think you're a masterful chef who's been cooking for hours, but it's actually only taken you 15 minutes (at the very most!)

Homemade Fancy Fries

Deliciously moreish and fluffy, these fancy fries are quick and easy to make at home. Flavoured with Greek herbs, they are perfect for munching on with friends and family, all huddled around a warm fire with some games.

Ingredients

  • 4 large baking potatoes, chopped into chip shapes (try tout them 1cm thick)
  • 2 tbsp dried oregano
  • 1 tbsp dried thyme
  • 1 tbsp dried rosemary
  • 1 tsp fennel seeds
  • 3 tbsp extra-virgin olive oil
  • 6 spring onions, finely chopped
  • 100g feta
  • Extra: additional fresh herbs (same as used above)
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 200°C / Fan 180°C / 375°F / Gas Mark 6.
  2. On a large baking tray, spread out the cut potato chips and sprinkle over the dried oregano, thyme, rosemary and fennel seeds. Drizzle over with the olive oil and bake for roughly 20-25 minutes, or until the chips have slightly browned and the chips are fluffy on the inside.
  3. Sprinkle over the chopped spring onions and crumble over the feta, and finish off with some salt and pepper and a few fresh herbs.
