Chocolate Granola Date Bark

So this is the first viral trend that I'm hopping onto, and this recipe couldn't be more up my street...it's me in a sweet treat form! After making it, I can totally see why it's so addictive. Not only is it fun to make and easier than stuffing dates (and not as messy) but it's so much more versatile and, dare I say it, even more delicious!! I've made mine slightly bulkier and complex because I couldn't restrict myself down to just three toppings but I can promise you it still tastes unbelievable, and every bite is just perfect.

A Healthy-ish Sweet Treat

What's even better is that this recipe is completely gluten-free and plant-based. Obviously you can choose your own granolas and brands of nut butter and chocolate that you prefer, as I'm well aware that everyone has their favourites. I always try to make sure that I chose brands that I know include the best possible ingredients (e.g. I use Pip and Nut's Peanut Butter as they don't include any palm oil) as this will contribute to the flavour and you're helping the planet at the same time (yay!).

And one last thing...think of this recipe as a healthier version of a snickers bar, but it's homemade, slightly creamy and not filled with extra sugars and additives. In fact, it's filled with these things:

  • Medjool dates - these types of dates help to promote healthy digestion due to being a source of fibre, they can lower the levels of bad cholesterol in your body and are sources of calcium, potassium, manganese and copper
  • Peanuts - whilst slightly higher in fat that other nuts, peanuts are high in protein, one of the best sources of biotin (a vitamin that helps convert food into usable energy in the body) and rich in antioxidants that could help to reduce the risks of cancer and heat disease.
  • Dark Chocolate - dark chocolate, in small amounts, is rich in iron and plant chemicals that are linked to lower risks of heart disease and healthier blood pressure.

The viral recipe that everyone's loving - if you're a medjool date and dark chocolate lover, then this one is for you!

Ingredients

  • 300g medjool dates
  • 5 tbsp vegan greek yoghurt
  • 200g gluten-free granola
  • 3 tbsp peanut butter (I love crunchy)
  • 1 tbsp coconut oil
  • 100g dark chocolate
  • Sea Salt

Instructions

  1. Remove the pits from the medjool dates by cutting the dates in half, and then place them closely together on a baking tray lined with greaseproof paper.
  2. Gently squash down all the medjool dates with the bottom of a glass, making sure the dates stick together too.
  3. Spoon over the vegan yoghurt, spreading to make sure all of the dates are covered and then sprinkle over the granola.
  4. Melt the peanut butter and coconut oil in a small saucepan, mixing together to make sure hey are fully combined and then drizzle over the dates, again smoothing the surface over and making sure everything is covered.
  5. Melt the dark chocolate until it's turned into a liquid, and then drizzle this on top of the dates. Sprinkle with some sea salt and then place in the freezer for roughly 30-45 minutes until completely frozen.
  6. Remove from the freezer and slice into hards.
