Bougie Baked Beans on Toast

This is such an incredibly easy dish to make it's actually quite silly, but it always please people whenever I make it for them. I promise you, every single time there is an exclamation and a genuine delight, especially when I tell them how quick it is to make. It practically shouldn't be classed as a recipe as there are so few ingredients, but it's so super delicious I just wanted to share it with you. If you're looking for a switch-up of breakfasts, or need a lunch that takes less than 15 minutes to cook, then this is the one for you.

Very Versatile

I lurrrve using Smoked Applewood Cheddar Cheese in this breakfast, as the smoky depth works so so so well with the beans. (And good news, you can also get a vegan version of this cheese to make a fully plant-based version of this recipe if you wish!) If you don't like smoked cheese, then a creamier alternative does work just as well, such as a mature cheddar cheese or a Red Leicester, but you may wish to sprinkle over some smoked paprika afterwards to bring the smokiness in, or you could leave this step out altogether. But trust me when I say that the smoky flavour is the main winning part of this recipe, skeet it in if you can!

Ingredients

  • 1 wholemeal bread roll (any bread roll will do, but I love using mini olive rolls)
  • 2 spring onions, finely chopped
  • 30g smoked Applewood cheddar cheese, grated
  • 200g baked beans
  • A generous handful of kale (with the stalks removed)
  • Extra Virgin Olive Oil
  • Additional: butter for the toast, salt and plenty of pepper!

Instructions

  • Halve the bread roll and place in the toaster.
  • In a small saucepan, cook the beans until the tomato sauce has slightly thickened and the beans are cooked.
  • In a wok or frying pan, sauté the kale for a few minutes, massaging the leaves in a bit of extra virgin olive oil first to really bring out the flavour and texture.
  • If you wish, butter your toasted bread and place on a plate. Place over the kale and gently pour over the beans on top.
  • Sprinkle over the grated cheese and chopped spring onions, and finish with a generous pinch of salt and pepper (the more pepper the better!!)
