In my eyes, whoever first put banana and peanut butter together is an absolute angel. It's just one of the best food combinations ever. Recently though, I have been addicted to blueberries and I just mixed the three together and it was a game-changing experience. (You may be laughing, but it's true!!) When you then finish with a sprinkling of sweet cinnamon, oh it's so good. SO GOOD. You just have to make it and let me know what you think.
If you like your sweeter mornings, and choose to have fruit instead of eggs for breakfasts, then this is definitely something you should try. The banana, blueberries and honey give you the perfect level that you need to satisfy that sweet craving, but the cinnamon and peanut butter bring that kicking nutty, savoury and earthy hint that works so well with the oats. I also choose to use almond milk to make the porridge base more nutty (and creamy!) but you could choose any milk that you like. I also prefer my porridge to be on the thicker side, but you can choose to make your porridge as thick or runny as it suits you...
I've also tried to make sure that this breakfast is reasonably well balanced with nutrients, essential protein and beneficial ingredients to make it an even better and healthier choice. You'll see I've used milk and water in the porridge base (so it's not so high in saturated fat and will help to lower cholesterol levels), the blueberries are filled with antioxidants and essential compounds that can help to prevent eye damage and improve eyesight and memory, the bananas are filled with potassium and will slowly release energy throughout the day and the peanuts are particularly high in protein. So, it's filled with goodness, and it's warming, satisfying and ready in under 15 minutes - what's not to love?
