Apple, Raisin and Cinnamon Chia Pots

I don't know about you, but I'm often on the go a lot and need to take my breakfast along with me - it doesn't help that I'm also one of those people who can't eat straight away after getting up in the morning! I also don't have a lot of spare room in my bag, and these little pots are just perfect for days when you need to head out the door without worrying about bringing along your entire breakfast cupboard. They may only take fifteen minutes to make, but they're fulfilling, incredibly nutritious and a delightfully seasonal mix of flavours that will satisfy every sweet tooth, whilst also having earthy undertones for the savoury lovers. (They're also extremely pretty to look at too, which is obviously so important when you're eating it in your staff room next to your other colleagues!! Expect plenty of remarks coming your way!)

Small but Mighty

Even though they may be tiny, it's so important to remember how beneficial chia seeds are, and just how great they are for your general health. Not only are they extremely high in omega-3, which can help to lower the risks of heart diseases and strokes, but they also contain iron, magnesium, soluble fibre and antioxidants that all help to protect your body cells from free radicals (compounds that can build up and contribute to ageing and cancer), reduce possibilities of obesity and build healthy bones and teeth. So, really, they're an absolute essential. If you're feeling adventurous, these seeds are incredibly versatile and are great sprinkled over salads, blended into smoothies or sprouted to add into salads, but are just as delicious mixed with blended fruits and liquids and turned into healthy breakfast pots or desserts.

Apple, Raisin and Cinnamon Chia Pots

The perfect breakfast for someone on the go, these pots are filled with the flavours of autumn and winter and are filling, wholesome and nutritious, and will satisfy your sweet tooth at the same time!

Ingredients

  • 1 apple, chopped into cubes
  • 1 tbsp maple syrup
  • 1 tbsp raisins
  • 30g chia seeds
  • 20g oats
  • 200-300ml almond milk (or any other milk you prefer)
  • 10g mixed seeds (I use pumpkin and sunflower seeds mixed together)
  • 3 tsp ground cinnamon
  • 1 tbsp honey
  • 1 tbsp greek-style natural yoghurt
  • 1 tbsp almond butter

Instructions

  1. In a small saucepan, cook the cubed apple and maple syrup together over a medium heat until the apple softens and the maple syrup caramelises slightly over the apple (this should only take 5-10 minutes).
  2. In a small bowl, mix together the chia seeds, the oats, the milk, ground cinnamon and the honey until everything is combined and place in the fridge for 5 minutes. The mixture should start out as being quite runny, but this will thicken in the fridge, so use as much milk as you need to.
  3. Once the chia and oat mix has thickened, give everything another good mix and place the greek style yoghurt on top. Sprinkle the seeds, raisins and apple cubes on top, along with a slight extra dusting of cinnamon and a drizzle of the almond butter and you're good to go.
