Very Berry Açai Bowl
A deliciously healthy pudding that is light and earthy with a fruity twist, inspired by classic açai bowls from Brazil. Also works brilliantly as an indulgent breakfast!

Ingredients
- 1 frozen banana, chopped
- 175g frozen fruits (ideally a mix of strawberries, raspberries, blueberries and blackberries)
- 1 tbsp açaí powder
- 2 tsp cacao powder
- 1 tsp orange juice
- 1 tsp almond butter
- Additional: extra chopped fruit (I love strawberries or blackberries), granola, nut butter (I prefer peanut or almond), chunks of dark chocolate, raisins
Instructions
- In a powerful blender or food processor, blend together the banana and frozen berries until they form a thick paste. (This will be very loud and you may need to hold it down!)
- Add in the açai powder, the cacao powder, orange juice and almond butter and mix until everything is fully combined. (If the mixture is a bit too thick for you, you could always add in a tbsp of almond milk, but it should have a consistency liked slightly melted ice cream!)
- Sprinkle with your additional toppings and eat straight away! (I love to serve mine with some chopped strawberries, blackberries, a sprinkling of granola, a couple of chunks of dark chocolate and a drizzle of peanut butter).
