Sunshine Trail Mix

A gloriously colourful mix of crunchy nuts, tender dried fruits and chunks of dark chocolate that will brighten your day, and be ready in less than 20 minutes. Perfect for healthy snacking!

Ingredients

  • 90g almonds
  • 60g cashews
  • 60g Brazil nuts
  • 50g raisins
  • 40g dried mango
  • 40g dried apricots
  • 20g goji berries
  • 50g mixed seeds (I use sunflower, pumpkin and sesame seeds)
  • 30g dark chocolate

Instructions

  1. On a chopping board, cut the dried mango, apricots, Brazil nuts and dark chocolate in smaller pieces - ideally they would be roughly cubed size, but as long as they of similar size to the almonds and cashews then that's just as good.
  2. In a large bowl, mix together all the ingredients until everything is combined and pour into a large glass or container.
