Ingredients
- 100g gluten-free oats
- 150g mixed nuts (I use almonds, pecans, Brazil nuts and walnuts)
- 130g raisins
- 80g mixed seeds (I use pumpkin, sunflower, chia and linseeds)
- 2 tbsp coconut oil
- 1-2 tbsp honey
- 1 tsp vanilla extract
- 1/2 tsp ground sweet cinnamon
- 70g dark chocolate
- Sea Salt
Instructions
- Preheat your oven to 200°C / 400°F / Gas Mark 6.
- In a saucepan melt together the coconut oil, honey, vanilla extract and ground sweet cinnamon and stir until everything is combined.
- Place the gluten-free oats, mixed nuts, raisins and mixed seeds into a large bowl and stir until the dried ingredients are mixed and then drizzle over the melted combination. Give everything a really good stir, making sure all the dried ingredients are covered with the honey mixture and spread out evenly over a baking tray. Sprinkle with some sea salt.
- Place the baking tray in the oven and cook for 20 minutes, turning and stirring the mixture every 5 minutes. If you want to remove the granola from the oven any time before the 20 minutes is up then please do.
- Once cooked, place the granola baking tray on the side and leave to completely cool. Once cold, mix in the chunks of dark chocolate and place in a storage container to eat throughout the week.
