Honeyed Pear, Bacon and Goats Cheese Sourdough Toasts

These toasts are the perfect little bites for a hungry stomach - think bougie, sophisticated and fruity!

Ingredients

  • 2 slices sourdough bread (I love using one with fruit in)
  • 3 tbsp runny honey
  • 2 pears, sliced thinly
  • 6 rashers of veggie bacon (I use Richmond's Vegan Meat Rashers)
  • 2 tbsp pomegranate seeds
  • 70g goats cheese, sliced
  • Extra Virgin Olive Oil
  • 1 tbsp ground sweet cinnamon

Instructions

  1. In a large frying pan, mix the ground sweet cinnamon, olive oil and 2 tbsp of the runny honey together and heat over a medium heat for a couple of minutes. Gently place the bacon rashers and pear in the frying pan and cook everything together until the bacon is fully cooked, and both have caramelised slightly and turned golden brown.
  2. Toast the sourdough bread - once toasted, if this is your preference, then butter the toast slightly.
  3. Layer the bacon rashers and slices of pear over the toasted sourdough, and gently place the goats cheese slices on top. Sprinkle over the pomegranate seeds and finish with a drizzle of the remaining honey.
