Chimmichurri Smashed Sweet Potatoes with Feta

If you’re a fan of unusually good snacks you will be so surprised by these you guys. They’re a mix of acidic, sweet, salty and creamy flavours and textures all in one and so so good!!

Ingredients

  • 3-4 small sweet potatoes
  • 5 spring onions
  • 1 bunch of fresh coriander
  • 2 tbsp dried oregano
  • 2 cloves of garlic
  • 1 tsp chilli jam (or half a fresh chilli)
  • 50ml red wine vinegar
  • 50g feta cheese
  • Couple of handfuls of fresh rocket
  • Extra Virgin Olive Oil
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 200°C / 400°F / Gas Mark 6.
  2. Cut the sweet potatoes in half and after placing them on a baking tray, drizzle over some extra virgin olive oil and season with salt and pepper. Place in the preheated oven to roast for 40-45 minutes.
  3. In a food processor or blender, add the spring onions, fresh bunch of coriander, dried oregano, cloves of garlic, chilli jam and red wine vinegar and blitz everything together until it's completely smooth. Pour the sauce into a small bowl and leave to the side.
  4. Carefully remove the sweet potatoes out of the oven and using the bottom of a drinking glass, push down on top of the sweet potatoes until they are 'smashed' (basically until some of the potatoes comes out of the sides). Sprinkle with some more salt and pepper and place back in the oven for 5-15 minutes until the potatoes are crispy and completely cooked.
  5. Spoon over the chimmichurri sauce evenly and then sprinkle over the feta cheese. Finish with a handful of fresh rocket distributed evenly over the sweet potatoes and serve immediately.
