Bougie Baked Beans on Toast
The easiest breakfast ever to exist on this planet, but also one of the tastiest...need I say more.

Ingredients
- 1 wholemeal bread roll (any bread roll will do, but I love using mini olive rolls)
- 2 spring onions, finely chopped
- 30g smoked Applewood cheddar cheese, grated
- 200g baked beans
- A generous handful of kale (with the stalks removed)
- Extra Virgin Olive Oil
- Additional: butter for the toast, salt and plenty of pepper!
Instructions
- Halve the bread roll and place in the toaster.
- In a small saucepan, cook the beans until the tomato sauce has slightly thickened and the beans are cooked.
- In a wok or frying pan, sauté the kale for a few minutes, massaging the leaves in a bit of extra virgin olive oil first to really bring out the flavour and texture.
- If you wish, butter your toasted bread and place on a plate. Place over the kale and gently pour over the beans on top.
- Sprinkle over the grated cheese and chopped spring onions, and finish with a generous pinch of salt and pepper (the more pepper the better!!)
