Berry Nice Yoghurt Breakfast Bowl

She's fruity, she's buildable and she's super light...she's your dreamy berry breakfast bowl. Ready in less than 10 minutes, this is one of my favourite breakfasts.

Ingredients

  • Handful of strawberries, chopped
  • Handful of blueberries
  • Handful of raspberries
  • 3 tbsp strawberry yoghurt (I LOVE Alpro's vegan one!)
  • 1 tbsp honey (or maple syrup)
  • 2 tbsp pumpkin seeds
  • 1/2 tbsp almond butter
  • 2 tbsp granola

Instructions

  1. In a small saucepan, mix the raspberries and the honey and cook over a medium-high heat until the fruit has softened and the texture is similar to that of a compote.
  2. Add the strawberries and blueberries into a bowl and place the yoghurt onto the side.
  3. Spoon over the raspberry compote and sprinkle over the pumpkin seeds ad granola of choice. Finish with a drizzle of the almond butter and eat immediately.
