Banana, Blueberry and Peanut Butter Porridge
Nutty, sweet, warming...this banana, blueberry and peanut butter porridge is perfect for colder mornings, and is a great breakfast pick-me-up!

Ingredients
- 1 banana, mashed
- 40g porridge oats
- 100ml almond milk (or any other milk you prefer)
- 100ml water
- 40g blueberries
- 1/2 tbsp runny honey
- 1 tbsp peanut butter
- 1 tsp ground cinnamon
- Extra: sprinkle of mixed seeds, handful of raw unsalted peanuts
Instructions
- In a saucepan, mix the mashed banana and the porridge oats together, and then pour in the almond milk and water. Give everything a good stir, and cook gently over a medium heat until the liquid starts to bubble slightly. Make sure that you keeps stirring the porridge too, to stop the oats sticking to the bottom of the pan.
- Once the porridge has thickened then mix in the peanut butter until thoroughly stirred in, and pour into a bowl. Drizzle over the honey, sprinkle over the cinnamon and blueberries and serve immediately. (I sometimes love to sprinkle over some mixed seeds too for an extra crunch, but you could swap these for unsalted peanuts or just leave them out.)
